Recipe: Copycat Chili Lime Chicken Burgers (Low FODMAP)

Have you ever tried Trader Joe's Chili Lime Chicken burgers? They're actually one of the first foods I tried at Trader Joe's, and as an easy freezer option- I've loved having them on hand ever since. They're made of simple ingredients and they're totally delicious. My only qualm? They're kind of puny. And even with a hearty bun and some thick slices of avo, I wish there were a bit more OOMPH to my burger, you know? Well... I decided to bring it in myself.
You all loved my last copycat recipe so I thought I'd bring in one of my other favorites! Simple, delicious, the best for summer.
You're going to love grilling with these. ENJOY!

Copycat Chili Lime Chicken Burgers
Makes 4 (hearty) burgers
1 lb ground chicken
1/2 tsp chili powder
1/2 tsp garlic powder (remove for low FODMAP)
1/4 tsp sea salt
zest of 1 lime
juice of 1 lime
Mix all ingredients into a large bowl. Using hands (wet if needed), form into four balls. Flatten onto a parchment lined plate or baking sheet.
Bake at 375 or grill for 5 minutes per side, or until cooked through.
Chef's Note: burgers are quite sticky, as is the nature of using ground chicken. I recommend forming into patties with your hands and letting sit in the fridge for a few before grilling if using the grill-- and spraying the grill WELL to avoid sticking (start hot, too!).
