Meal Plan Monday: Family Dinners Week of 2/1



Happy Monday and happy new month, mamas! Gosh, I love a new month- it always feels like a fresh start. Lately I've been re-reading one of my favorite books, Begin Again by Leeana Tankersley, and it is SO speaking to me in this season. So here's to a new month, and beginning again!

Here's what's on our meal plan, this week:




Meal 1: Curried Sweet Potato Turkey Meatballs with tahini sauce and cauliflower rice


It has been far too long since I made this recipe, and I bought a bunch of sweet potatoes on sale at Whole Foods last week, so we are utilizing them, this week!



Meal 2: 5-ingredient curry

I love this easy curry from Pinch of Yum with broccoli, sweet potatoes (yep, using them up!) and tofu. We have most of the ingredients already on hand, and I always serve it on a bed of rice!


Meal 3: Taco Tuesday


Last week's taco Tuesday inspired me to use up the shrimp we have in our fridge and make shrimp tacos! I'm planning a similar version to this recipe (without the pineapple because it's about $1 million in New England, these winter days!)

Meal 4: Sweet Potato, Kale and White Bean Soup


I have a little kale leftover from last week, so I'm making this family favorite soup, this week! Sometimes I make it with chicken sausage, sometimes I make it without- it's always simple and delicious!

Meal 5: Peanut Chicken bowls

What I prepped ahead:

  • Veggies: chopped greens for salads

  • Veggies: chopped carrots, celery and onion

  • Veggies: chopped and grated sweet potatoes

  • Veggies: Chopped broccoli

  • Protein: Prepped sweet potato turkey meatballs
