8 Easy Summer Salads

Though school is starting in just a few weeks, it still feels like summer here in New England. It's humid and sticky and turning on the oven has been less and less appealing, these days! Thankfully, my family is on board with my current love of big, flavorful salads, so I thought I would share eight of my favorite simple meal-sized salad recipes with you.

1. Grilled Beet + Asparagus Salad with Turmeric Dressing (add some chicken, steak or roasted chickpeas and make it a full meal!)
