Recipe: Coriander-seared Whitefish with grilled baby bok choy + turmeric cauliflower rice

For those of us in the Northeast, summer has hit- and hard. We went from barely-feeling-like-spring to BAM, feels like 105 (and humid, of course). Cooking complicated meals is less than appealing when your shorts stick to you like your kid snuck up and rubbed you with a glue stick. Ick. That's why quick recipes like this one are perfect for hot summer nights, and this one in particular had all of us swooning over the delicious flavors- with very little effort. Can I hear an Amen, mamas? Make this for your next dinner party, or when you just want your family to feel fancy!

Coriander Seared Whitefish 1 lb white fish filets of choice (whatever is fresh!) pinch sea salt coriander spice rub (see below) avocado oil Spice rub: 1/2 tsp coriander 1/4 tsp cumin 1/8 tsp dried ginger pinch garlic powder 1. Remove fish from any packaging and pat dry. Sprinkle lightly with sea salt. 2. Mix the spice rub together and gently pat over fish, both sides.

3. Heat a generous amount of avocado oil in a large pan on medium-high heat (you want it hot, but not smoking). When pan is hot, place fish, skin-side up, on pan. Cook for about 1 minute per side, depending on thickness, until flaky. Top with microherbs, like cilantro or basil for a fresh summer feel. I added some fresh chopped maitake mushrooms sauteed in ghee + sea salt to the top-- I highly recommend if you have access to some! Shitake would work, as well.

Grilled Baby Bok Choy 1 lb baby bok choy, sliced in half 1- 1" piece of ginger, chopped 1 tbsp sesame oil 1 tsp coconut aminos 1. In a small bowl, whisk together chopped ginger, sesame oil and coconut aminos. 2. Brush bok choy generously with sesame oil mixture.

3. Grill on medium heat, keeping on one side until bok choy is wilting (about 2 minutes). Flip for another minute or so, until cooked. Serve brushed with more sesame oil mixture if desired.

Turmeric Cauliflower Rice 1 tbsp ghee 2 cups cauliflower rice, fresh or frozen 1/2 tbsp turmeric 1 tsp cumin dash garlic powder sea salt + black pepper 1. Heat ghee in a large high-sided sautee pan. Add cauliflower rice, add seasonings and cook until almost done. Taste before serving.
