I shared this recipe a couple weeks back on Instagram and realized I've never shared it here on the blog! This is one of the OG super simple lunch recipes from the Clean Lean Mama core recipes book, and it's a recipe I've come back to again and again over the years for a quick, filling, meal prep-friendly (I swear it gets better each day) lunch. Now this is no piece of culinary genius- it's a super quick, yummy meal that will keep you going throughout your busy mama day, and it's perfect for the summer, with fresh tomatoes and cucumbers showing up at markets everywhere.
Chickpeas are a great source of fiber, b-vitamins and plant-based calcium; but they don't work for everyone- if this is you, skip them and add a few extra veggies, instead (will make less servings).
Chopped Chicken Chickpea Salad
Makes about 3 servings
1 cup cooked chicken breast; cubed 1 can chickpeas, rinsed and drained 1 cup english cucumber, diced 1 cup Grape tomatoes, halved 1/4 cup feta or goat cheese, crumbled (optional) 1/2 cup Fresh cilantro, washed and chopped 1 tbsp lemon juice 1 tbsp olive oil sea salt and pepper to taste
Optional: 1 pita, chopped and toasted until golden 1. Add all ingredients to a large bowl and toss to combine. Top with pita toast (if using) and serve.
