Recipe: Summer Steak Tips

Being pregnant in the heat of the summer means I have been relying on a LOT of quick, simple dinners, the last month or so. Luckily I have most of my energy back, but running around with a young kiddo 5/7 days a week (I'm so thankful for my 2 quiet days sitting down with clients or blogging!) means at the end of the day, I'm exhausted. So having something like steak tips marinating in the fridge, that I know will come together in, oh, 10 minutes?! Life-saver. (And budget saver, sometimes I feel like we're eating our savings in Chipotle!). Plus, steak tips are a delicious and nutrient-dense option for any mama, but they do provide a good dose of protein and iron for pregnant mamas-- win, win.

Simply Marinated Summer Steak Tips As with anything marinated, these obviously taste better the longer they sit! But even if you just have an hour or two- they'll be delicious.

Marinade: 4 tbsp avocado oil

3 tbsp balsamic vinegar

1 tbsp worcestershire sauce

1/2 tbsp honey 1/2 tbsp prepared mustard 2 cloves garlic, minced 1 tsp dried oregano

Steak Tips: 1 lb grass-fed steak tips sea salt and cracked pepper as needed avocado oil, for cooking 1 sweet onion, sliced thin 1 pint sliced mushrooms 1 pint cherry tomatoes

To prepare:

1. Whisk all marinade ingredients together. Season steak and toss in marinade. Let marinate for at least 1 hour. The longer, the better! 2. Drizzle avocado oil in pan and turn to medium-high heat. Add onions and mushrooms and cook until soft.

3. Add steak and remaining marinade to pan. Cook on one side, about 2-3 minutes, until most of liquid is evaporated. Flip and add cherry tomatoes.

4. Cover and cook another 3-5 minutes until steak is cooked to liking and tomatoes are soft.

Serve with rice, cauliflower rice or your choice of starch, and a green-- because greens are just good, right?!
