Meal Prep Chicken Burrito Bowls
Ever catch yourself grabbing bites off your toddler's leftover lunch plate, or shoving turkey slices and cheddar bunnies down your pie hole while trying to get lunches out for crazy kids? How about being so busy getting kids/husbands/self out the door you completely forget your own lunch (take out, again). #guilty. Anyone else?! Whether you're a stay at home mom or a working mama (or both- points finger at self!) meal prep seriously makes crazy #momlife days all the easier! Lunch is what is going to get us through those crazy days with ease (read: energy!) so a balanced mid-day meal is crucial. These Meal Prep chicken burrito bowls are the perfect super simple make-ahead meal prep lunch to last you the whole week (or at least a few days!).
Meal Prep Chicken Burrito Bowls 1 batch salsa chicken 1 can black beans, drained and rinsed 1 batch cilantro lime cauliflower rice 1/2 cup salsa of choice 1/2 cup cilantro leaves, torn For salsa chicken: 1 lb chicken breasts 1 jar salsa 1. Place chicken breasts in slow cooker. Cover completely with salsa. Let cook on low 5-7 hours until chicken shreds easily with a fork. Shred, let cool and set aside until ready to use. For cilantro lime cauliflower rice: 1 head cauliflower, chopped 1-2 cloves garlic 1 tbsp oil of choice 1/4 cup chopped fresh cilantro juice of 1 lime sea salt to taste 1. Set up food processor with shredding blade. Add garlic first, and scrape into large bowl. 2. In 3-4 batches, place chopped cauliflower into food processor and pulse until you achieve a ‘rice’-like consistency. 3. Place all in bowl and mix to combine. 4.. Heat oil in a deep saucier or sauté pan. Add cauliflower and cook until just softened. Stir in cilantro and lime juice and cook until liquid is evaporated. Season with salt and serve as you would rice.
To prep: Layer salsa chicken, black beans, cauliflower rice, salsa and cilantro in to-go containers. Seal tightly and store in fridge up to 4 days. Heat if desired and serve!
