Recipe: Cajun Cod Tacos with cabbage slaw + avocado
I know, I know. I totally missed Cinco De Mayo with this one. But I had to share- I just can not stop thinking about these tacos!!
I feel like as soon as it turns spring time, I start craving slightly cooler, lighter foods. Not the salads and fruit I tend to crave in the summer time, but fresher, brighter fare. These tacos fit the bill, and then some. Slightly spicy, flaky cod served over fresh cabbage slaw (meal prepped for ease!) with sliced avocado and fresh cilantro in sprouted tortillas pack flavor and nutrition with a ton of healthy fat, protein and fiber to keep the whole family full and satisfied. Not to mention they are EASY- 15 minutes, start to finish, promise. Now that's my kind of dinner. I LOVE fish in my tacos- the cajun seasoning works great to add a nice zing to plain cod, but you could use chicken, as well, if you're not a fan.
Cajun Cod Tacos with cabbage slaw + avocado
1 16-oz piece of cod (enough for 4) 2 tsp cajun seasoning + 1 tbsp flour of choice, whisked sea salt to taste avocado oil 1/4 cup avocado oil mayonnaise juice of 1/2-1 lime 1 tsp cumin sea salt to taste 1 bag of pre=made cabbage slaw mix 8 small tortillas 1 small avocado, sliced fresh cilantro stems
1. Pat cod dry and season all over with cajun/flour mixture and sea salt. 2. Heat avocado oil over medium high heat in a large cast- iron or nonstick pan.
3. Place cod in pan and cook until golden and cook on one side. Flip and cook until done. Cover and set aside until ready to assemble. 4. To make slaw mix, whisk mayonnaise, lime juice, cumin and a pinch of sea salt. Taste, adding more lime juice as desired. Toss with cabbage mix and season as needed.
5. To assemble, place a small scoop of slaw on each tortilla. Top with cod, avocado slices and fresh cilantro. Repeat until all tortillas are filled.
