Well, it's already past halfway through the month and one of my goals-- to blog more and share more recipes-- is just picking up now. Better late than never, I suppose! Today I wanted to share one of my oldest recipes- and one of our family's very favorites. Our breadless breaded baked chicken (otherwise known as fake and bake-- you know, like shake and bake, but not? I know, my food jokes are awful). This recipe is a favorite because it's so simple, appealing to many- especially those who are used to standard American meat recipes like breaded chicken; and it makes extras-- which means enough for more than one meal (mom win!).
The 'breading', as the title implies, consists of no bread at all; or grains, even. A mix of ground sunflower seeds, flax seeds and seasonings makes up a heart healthy and nourishing breading that's packed with flavor, equally satisfying for healthy mamas, daddies and kiddos alike.

Just don't tell your kiddos this delicious chicken (or turkey-- use either!) is so healthy!
Breadless Breaded Baked Chicken 1/2 cup sunflower seeds 1/2 cup flax seeds 1/4 tsp each: thyme, oregano, parsley, marjoram, sage, mustard powder OR 2 tsp poultry seasoning 1/2 tsp onion powder 1/2 tsp garlic powder 1 tsp sea salt pinch black pepper 6-8 chicken thighs or 3-4 thin sliced chicken or turkey breast olive or avocado oil; as needed 1. Preheat oven to 375 degrees. Using the dry blade of a high speed blender or your food processor (coffee grinder works well, too-), grind sunflower seeds and flax seeds with seasonings until they are a fine meal. 2. Sprinkle chicken pieces with olive oil and rub to coat. 3. Dredge oiled chicken in breading mixture and place onto a heavy parchment-lined baking pan. Repeat until all pieces are breaded. 4. Bake in oven for 30-40 minutes. Turn oven to broil and cook for another 1-2 minutes, watching carefully, to brown and crisp tops.
