Recipe: Savory Spiced Carrot Fries



Have you heard about my latest recipe obsession? I've been making these babies at LEAST once a week now, they satisfy my craving for crispy, salty, carby fries- but with a way higher vitamin ratio (and flavor profile). They're CARROT FRIES and they are to die for! Carrots? As FRIES?! Would you believe me if I told you my toddler ate 3/4 of the pan, as well?! Well, she did! I wish I had something to show for it... but they were gone too soon. This mama's not complaining! I love to use colorful carrots in shades of orange, yellow and purple to add some color and an extra nutrient kick, but plan ol' orange will do, too. Switch the spices up as you desire- or just stick to sea salt, but I love the middle eastern flair. Try them- I think you'll be pleasantly surprised! Savory Spiced Carrot Fries Serves 4 as a side (or some nights, 1 mama, 1 toddler!) 1 lb carrots, sliced into sticks 2 tbsp coconut oil or ghee 1 tsp cumin 1 tsp oregano 1/2 tsp garlic powder generous pinch of sea salt optional: small pinch of cayenne Instructions

  • Preheat oven to 400F.

  • In a large bowl, toss carrot sticks with oil and spices.

  • Lay out on large baking sheet with plenty of space in between.

  • Roast for 30-40 minutes, turning once, until crispy. Serve hot!
