If you've ever been a part of my community before, you know I'm a huge fan of having a MASSIVE salad every day for lunch. It's filling from all the fiber, it's jam-packed with nutrients- and it's delicious! If you do it the right way, of course. I call them #satisfyingsalads and I promise I'll do a blog post on them, one of these days. But for now, you'll have to settle for one of my favorite summertime salad recipes. Serve this alongside something fresh from the grill for a delicious al fresco dinner, or throw some chicken on top and call it a meal. Massaging the kale reduces bitterness and creates an almost-cooked texture that's appealing and easy to eat. Full of superfoods like sunflower seeds, goji berries, avocado and raw honey- it's chock full of nutrients, and with the sweet, creamy dressing, even my husband and toddler eat it up. Enjoy!
Sweet Superfood Kale Salad Serves: 2 as a meal, 4 as a side
1 small head kale, removed from stems and ripped or chopped 1/2 ripe avocado 1.5-2 tbsp lemon juice 1/2-1 tsp raw honey pinch of sea salt 3 tbsp chopped almonds 3 tbsp goji berries toasted sunflower seeds to top 2 radishes, thinly sliced
In a small bowl, combine kale with avocado, lemon juice, honey and sea salt.
Using hands, massage kale with avocado until fully incorporated and kale begins to wilt.
Toss with chopped almonds and goji berries.
Divide between two bowls. Top with radish slices and toasted sunflower seeds.
