Recipe: Chocolate Raspberry-Filled Cupcakes



Valentines day is just around the corner and we all want to shower (and be showered by!) our loved ones with love and sweet treats. We're all about the 80/20 around here-- there's nothing wrong with the occasional treat! But if you could easily create something just as yummy without the unnecessary additives, why not?! Rather than loading your family and friends up with sugary, and possibly chemically-laden sweets, share these simple, clean grain-free cupcakes- I promise they won't even know they're clean! Have a Happy Valentines Day fit family, I hope it is filled with an abundance of love and sweetness- the chocolate kind and otherwise. xo Kirstin Chocolate Raspberry-Filled Cupcakes Makes 12 1/2 cup coconut flour 1/4 cup cocoa powder 1/2 tsp sea salt 1/2 tsp baking soda 1/2 cup melted honey 1/2 cup melted coconut oil 6 eggs 6 tbsp all-natural raspberry jam or jelly chocolate ganache (recipe below) 1/2 pint organic raspberries, for topping 1. Preheat oven to 350. Whisk together coconut flour, cocoa powder, sea salt and baking soda. 2. In a separate bowl, beat eggs until frothy. Whisk in honey and coconut oil. Add flour to mix, slowly, stirring until combined. 3. Line a 12-cup muffin tin with paper liners. Pour one large spoonful, about 1/3 way up, and smooth. Make a small indentation in mixture and drop 1/2 tbsp dollop of raspberry filling in centre. Top each with another spoonful of batter, about 2/3 way up. 4. Bake in preheated oven 25-30 minutes until springy. Cool in pan for 5 minutes before cooling on a rack. Cool completely before frosting with ganache (recipe below). Top with a raspberry, or two. Keep in the fridge. Chocolate Ganache 1/2 cup organic whipping cream or coconut cream 4 oz dark chocolate pieces pinch sea salt 1. Heat cream over medium heat until just bubbling. Immediately remove from heat and stir in chocolate until smooth. 2. Stir in sea salt and transfer to a cool bowl. Place in fridge to set slightly, about 30 minutes, until greatly thickened. 3. Carefully spread on top of cupcakes and let cool in the fridge to firm. Enjoy! <3
